Swedish Meatballs

Swedish Meatballs Recipe

This is a fairly easy, low-fat version of Swedish Meatballs, but you should use the real all spice. I use some that somone brought me from Jamaica. I serve this on whole wheat rotini. This DOES NOT taste low fat or healthy; everyone loves it.

Ingredients

  • 3/4 pound ground white turkey
  • 1/4 pound sweet italian chicken sausage
  • 3 tablespoons seasoned bread crumbs
  • 3 cloves garlic, chopped
  • 1/2 small yellow onion, finely chopped (this adds moisture and flavor)
  • 1 egg
  • salt, pepper
  • 1 teaspoon all spice
  • 2 tablespoons freshly grated parmesian cheese
  • 3 tablespoons olive oil
  • 3 to 4 tablespoons flour
  • salt, pepper
  • 1 1/2 to 2 cups low sodium chicken stock or more (depends on how thick you like the gravy)
  • 1/2 cup sliced or chopped mushrooms (I used shitake the last time, but crimini work well)
  • 1 tablespoon olive oil
  • 2 cloves garlic, chopped

Directions

  1. Preheat oven to 325 degrees. Either spray a cookie sheet with cooking spray, or I use a 'silpat'.
  2. Mix first 9 ingredients (including parmesian cheese) with your hands, in a bowl.
  3. Roll in 1 1/2 inch balls and lay on cookie sheet.
  4. Cook in 325 degree oven for 20 min, and turn after 10 min. of cooking.
  5. While meatballs are cooking, heat olive oil in a saucepan over medium heat.
  6. Add flour and whisk well.
  7. Cook four in the oil for 1 to 2 min.
  8. Add Salt, pepper (to taste), and chicken stock (add the 1 1/2 cup first, let thicken, then see if you want to add more).
  9. Saute garlic in olive oil over medium heat for a couple minutes until transulent.
  10. Add mushrooms to garlic and olive oil and saute for another couple mintues.
  11. Add garlic and mushroom to gravy.
  12. Sometimes this doesn't seem like enough gravy to me. If you want more gravy, stir equal amounts of chicken stock and flour in little bowl with a whisk and add it to gravy. Then, add more chicken stock to thin it out again.
  13. (After the 20 min. in the oven), take meatballs out of oven and place into warm gravy and spoon gravy over meatballs and let them warm together for a minute or two.
  14. Serve over pasta or rice.
